Wine has become daily drinks for people, some people like red wine with slightly acidic astringent taste, some like sweet and fruity white wine. In addition to color, are there essential differences between red wine and white wine? And whether are they the same nutrients? Which are relatively healthy and nutritious?
Wine, distinguished from color, in addition to the common red and white wines, there are pink wine; while according to color, can be divided into red grape varieties (red peel white pulp), dyed varieties (red peel and red pulp) and white varieties ( white peel and white meat), white varieties only make white wines, dyed varieties only make red wines, can stain varieties, while red varieties can be brewed varying color wine from white to deep red. Wines of different colors are even related to the brewing process.
Red wine
Red wine is fermented with peel, in the fermentation process, the pigment in grape peel immersed in wine, the color is deepened. But peel section brings more than just colors, also gives red wine phenolic substance with antioxidant effect, such as tannins. Many studies have shown, wine polyphenols have strong free radical scavenging capacity and antioxidant effects are increased with the increase of the concentration of red wine polyphenols
A lot of red wine, during the collaring, will be secondary fermentation, also known as malo-lactic fermentation. This process will become stiff, strong acidity malic acid into softer lactic acid. Lactic acid fermentation can make wine more silky, rich body and taste when drink it.
The red wine contains B vitamins, riboflavin, niacin and pantothenic acid, the ratio is higher than white wine. But because of red grapes in more tannins, making it slightly acidic with astringent taste, aroma is more dense, the best drinking temperature is 16℃ ~ 18℃.
White wine
White wine is fermented by grape juice clarification, sometimes with a red rose grape, but it must be bleaching.
As white wines are made from grapes juice, so the lack of phenols - tannin that has the antioxidant in white wine grape pomace, so white wine antioxidant content is lower than that of red wine. White wine is higher acidity, the natural sweetness of fragrance mix rich fruity, pure taste, sweet and sour taste, best drink at 8℃ ~ 10℃.
